The rule I set
Every recipe had to work the first time, for someone who had never made it before, using ingredients from a normal grocery store. If it needed a specialist shop or a technique you had to practise, it didn't go in.
That rule threw out a lot of recipes I liked. What survived is the book.
How the recipes were tested
