The fastest weeknight dinner is not one recipe. It is a repeatable formula you can use with whatever is already in the kitchen.
Choose four parts
One quick protein: chickpeas, lentils, tofu, or white beans.
One vegetable: frozen broccoli, spinach, peppers, or leftover roasted vegetables.
One fast base: pasta, couscous, microwave rice, or toasted bread.
One bold sauce: tomato and basil, lemon-tahini, peanut-lime, or garlic-herb.
Cook in the right order
- Start the base first.
- Warm the protein with the vegetable in a wide pan.
- Add the sauce and a splash of water.
- Fold in the cooked base and finish with something bright—lemon, herbs, or pickles.
Couscous + chickpeas + spinach + lemon-tahini sauce. Finish with black pepper and chopped parsley.
Why the formula works
You make only four decisions, each ingredient has a job, and nothing depends on a specialty-store purchase. Keep two proteins, two bases, and two sauces on hand and you have several dinners without planning an entirely new recipe every night.
